This sauce makes use of the sharp flavor of the green chillies to enhance the formidable culinary characteristics of the Gongchoi. Also known as Mountain Jelly Vegetable, these pickled greens are a specialty of the Eastern regions of China. Appreciated for their peculiar texture, when kneaded into a paste, it becomes a versatile addition to literally any stir-fry for a salty, crispy and earthy flavor.
